Physical, chemical and microbiological quality of white shrimp Litopenaeus vannamei grown in BFT and conventional systems

Abstract

In Brazil, Carcinoculture is focused on the cultivation of the white shrimp Litopenaeus vannamei and mainly uses conventional systems of cultivation in semi-intensive regime. In order to reduce the discharge of nutrient-rich effluents caused by these systems, studies are being carried out using the Biofloc culture system (Biofloc Technology Culture System or BFT system). Currently, at the Marine Aquaculture Station of the Institute of Oceanography of the Federal University of Rio Grande (EMA-IOFURG), different studies are carried out to assess the efficiency of the BFT system for shrimp farming. This work aimed to promote the evaluation and comparison of the parameters of physical, chemical and microbiological quality presented by Litopenaeus vannamei grown in conventional systems and in BFT system.The specimens used came from three sources: Granja Baroque, Fazenda Viveiros do Sul (representing the conventional cultivation system) and EMA (representing the BFT system). The quality analyzes of the shrimp were carried out at the Food Technology Laboratory of the School of Chemistry and Food of the Federal University of Rio Grande (LTA - EQA - FURG). The results presented indicate that the shrimp analyzed are products of the highest quality for human consumption. In the comparison between the systems, BFT had a higher moisture and protein content and a lower lipid content. With these results it is possible to conclude that the shrimp cultivated in BFT system present a reduced content of lipids when compared to the organisms from conventional cultures.
